Low in fat, low in calories, flavorful and easy to make-this recipe is a specialty of my mother, who got it from my grandmother. My mom has had this recipe published in a newspaper and a cookbook, so I'm carrying on the tradition.
It is so flavorful and smells great while it's cooking. The recipe has been a huge hit at dinner parties, and you don't have to spend hours in the kitchen. It's comfort food, especially when served with mashed potatoes. It's also healthy and simple; you don't have to spend hours in the market hunting down obscure ingredients-most of them are probably in your refrigerator, freezer and spice rack already!

Nutrition facts: The biggest caloric content comes from the chicken and the olive oil, which are both sources of good fat.
* A great addition to this recipe: When you are ready to serve, remove chicken from pan. Pour onion/celery mixture into strainer over a small bowl to collect the pan drippings. Spread onion/celery mixture back over chicken. Then, add approximately 1 to 1-1/2 tbsp. sour cream (use fat-free if you have calorie concerns) to the drippings and whisk. Makes a great sauce for the chicken or on potatoes or other vegetables.
